Zucchini with garlic and oil

  • 4 large or 8 small zucchini
  • 3 Tablespoons olive oil
  • 4 cloves garlic, minced
  • salt and pepper to taste
  • romano cheese, grated (optional)

Place the zucchini on a cutting board and using a sharp knife, cut them in half, then cut into matchsticks.

In a large fry pan heat the oil until hot. Add the zucchini and cook for 10 minutes. Add the garlic and cook a few minutes more, making sure the garlic doesn't burn. Season with salt and pepper to taste. Serve immediately. Sprinkle with cheese if you wish. Serves 8.
